Apple pie with pudding - recipe

Apple pie with pudding is a delicious, yet very easy and quick to prepare cake. It is a shortcrust pastry combined with the taste of juicy apples and a hint of cinnamon, additionally covered with a layer of thick pudding. 


- 330 g flour
- 200 g of butter or margarine (cube)
- 1 egg
- 60-70 g powdered sugar (less than half a cup)
- 1 teaspoon baking powder
- 1.2 - 1.5 kg of apples (depending on the size of the baking tray)
- teaspoon of cinnamon
- 1 pudding - cream, vanilla or flavored with baked apple and cinnamon (yum)
- 500 ml of milk
- 2 tablespoons of sugar

Baking time:

40-45 minutes in an oven preheated to 180 degrees; top and bottom baking option

Method of making:

1. Knead the dough: on a pastry board or in a large bowl, place flour, baking powder, powdered sugar, butter (I recommend cutting it into smaller pieces) and egg. You can knead the dough by hand or use a planetary mixer.
2. Cut the finished dough in half, wrap each half in plastic wrap and place in the freezer for at least 30 minutes.
3. Cook the pudding according to the instructions on the package - pour 1.5 cups of milk into a pot, add 2 tablespoons of sugar to the remaining half cup, and add the contents of the pudding package. Pour the mixture into the boiling milk, reduce the power of the burner and stir until it thickens. When the pudding thickens and begins to boil again, stir the whole thing for about 30 seconds and set aside. 
4. Time to prepare the apples. Peel them and cut out the seed nests. Grate the apples on a coarse mesh grater. Set them aside for about 20-30 minutes to let them release their juice. Then squeeze out all the juice. The amount of juice will depend on the type of apples. Add a teaspoon of cinnamon to the apples and mix it all together.
5. Line a baking pan of about 21 x 28 cm or a round pan of about 24 cm with baking paper. Preheat the oven to 180 degrees.
6. Take one part of the dough from the freezer and fill the bottom of the mold with it. 
7. On the dough layer apples. 
8. On the layer of apples pour the pudding.
9. Take the other part of the dough from the freezer and grate it directly on the layer of pudding (coarse mesh grater).
10. Put the cake in the oven and bake for about 40-45 minutes.
11. After cooling, you can sprinkle the cake with powdered sugar.
